This is our summer honey produced by the bees from our garden and the surrounding countryside. This honey is pale, delicate and floral and we believe it is rather special. The honey is untreated, unblended, unprocessed and hand extracted. Due to its pale colouring and delicate floral flavour we believe the bees have foraged predominantly on local borage and phacelia crops that surround our farm at this time of year.
Summer Honey
Borage is an easily recognisable blue flower with a star pattern of dark leaves inside of the blossom. The flower itself has been held high regard for most of human history. It was believed to be hold notable benefits by the ancient Greeks, who used it as a strong sedative.
Europeans in the middle ages used the borage plant to make teas and syrups, that they believed relieved sadness/depression.
Phacelia is a fast growing crop which produce wonderful flowers attracting a multitude of bee species and other pollinators (and their predators). Newer research has shown that growing phacelia as a cover crop helps to build and stabilise soils, improve pollination of other surrounding crops and strongly supports local wildlife populations. It's why we love to see it in the fields surrounding our home.
The nectar from both these plants contribute to the delicate pale colour of the honey and the more subtle, floral flavours making it a firm favourite for drizzling over porridge, ice cream or spreading on your toast.
Our honey is always single source and never blended. Our hand extraction, no heat treatment and gentle filtration methods mean that only larger particles are removed leaving all the wonderful, natural anti-oxidants and pollen proteins behind. It really is a super food!
